Here is the latest example of my Classic Santoku, general purpose kitchen knife with an octagonal handle of African Blackwood and English Walnut.

The blade is made from 26C3 very high carbon steel with a brut de forge finish.

As with all the knives I make from this steel it has been differentially heat treated to give a very sharp cutting edge whilst the spine remains relatively soft resulting in a tough overall knife.

I have carried out the intense hand sanding required to show the Hamon on this blade, this is where the steel’s crystalline structure changes between the very hard and the less hard.
