Designed whilst I was working amongst fishmongers and fishermen, this semi-rigid filleting knife is made from differentially hardened 26C3 very high-carbon steel; this method of hardening ensures a sharper edge on a semi-flexible blade.

A traditionally handcrafted leather sheath is included in the price. I attach an articulated belt loop to the sheath so it’s less likely to get snagged up on things when worn.
